Normal milk (or cow’s milk) has an inflammatory protein called casein. Most pediatricians don’t want people after age two to drink cow’s milk because of the casein. Certain cheeses: okay. But cow’s milk in and of itself (not talking about a little milk in your coffee, as long as you’re not lactose intolerant) but generally the casein can cause a local and a body-wide inflammatory response. That’s the rationale for less cow’s milk after age two.
